Mexican Zucchini and Ground Beef Skillet
Ingredients:

1 lb ground beef

2 medium zucchini, diced

1 small onion, diced
-
2 cloves garlic, minced
-
1 can (14.5 oz) diced tomatoes, drained

1 teaspoon chili powder
-
1/2 teaspoon cumin
-
1/2 teaspoon smoked paprika
-
Salt and pepper to taste

1/2 cup shredded cheddar or Mexican blend cheese
-
Fresh cilantro for garnish (optional)
Instructions:

In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.

Add onion and garlic; sauté 2–3 minutes until softened.

Stir in zucchini, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Cook 5–7 minutes until zucchini is tender.

Sprinkle cheese over the top, cover, and let melt 1–2 minutes.

Garnish with fresh cilantro and serve warm.
