Mini Loaded Jacket Potato Bites with Sour Cream

Potato Bites

lb (680 g) baby potatoes

2 tablespoons olive oil

½ teaspoon salt

½ teaspoon black pepper

Filling & Toppings

1 cup shredded cheddar or Monterey Jack cheese

½ cup cooked bacon bits or turkey bacon, chopped

½ cup sour cream

2 tablespoons butter, melted

2 green onions, finely sliced


Instructions

1. Roast the Potatoes

  • Preheat oven to 425°F (220°C).

  • Toss baby potatoes with olive oil, salt, and pepper.

  • Roast for 25–30 minutes, until tender and crispy.

2. Smash & Fill

  • Remove potatoes and gently smash each with the bottom of a glass.

  • Brush tops with melted butter.

  • Sprinkle with cheese and bacon.

3. Bake Again

  • Return to oven for 8–10 minutes, until cheese is melted and bubbly.

4. Serve

  • Top with sour cream and sprinkle with green onions.

  • Serve warm.

Notes

Extra crispy: Broil for 1–2 minutes at the end.

Vegetarian option: Skip bacon and add sautéed mushrooms.

Make-ahead: Roast potatoes in advance, load and bake before serving.

Swap sour cream: Use Greek yogurt for a lighter option.
