Mushrooms Bordelaise
Ingredients

1 lb (450 g) cremini or button mushrooms, cleaned and sliced

2 tbsp olive oil

2 tbsp unsalted butter

2 shallots, finely chopped

3 garlic cloves, minced

½ cup beef or vegetable broth

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

Salt and freshly ground black pepper, to taste

1 tbsp chopped fresh parsley (for garnish)
Instructions

Sauté the Mushrooms
Heat olive oil and butter in a large skillet over medium-high heat.
Add mushrooms and cook for 5–6 minutes, stirring occasionally, until golden brown and any liquid has evaporated. -
Add Shallots and Garlic
Stir in shallots and garlic. Cook for 1–2 minutes, until fragrant. - Add Broth and Herbs
Stir in broth and thyme. Lower heat and simmer for 5–7 minutes, until the sauce thickens slightly. -
Season and Finish
Season with salt and black pepper to taste.
Garnish with chopped parsley before serving.
