Mushrooms Bordelaise

Ingredients

  • 1 lb (450 g) cremini or button mushrooms, cleaned and sliced

  • 2 tbsp olive oil

  • 2 tbsp unsalted butter

  • 2 shallots, finely chopped

  • 3 garlic cloves, minced

  • ½ cup beef or vegetable broth

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)

  • Salt and freshly ground black pepper, to taste

  • 1 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Sauté the Mushrooms
    Heat olive oil and butter in a large skillet over medium-high heat.
    Add mushrooms and cook for 5–6 minutes, stirring occasionally, until golden brown and any liquid has evaporated.

  2. Add Shallots and Garlic
    Stir in shallots and garlic. Cook for 1–2 minutes, until fragrant.

  3. Add Broth and Herbs
    Stir in broth and thyme. Lower heat and simmer for 5–7 minutes, until the sauce thickens slightly.
  4. Season and Finish
    Season with salt and black pepper to taste.
    Garnish with chopped parsley before serving.
