1 lb (450g) ground beef

1 small onion, finely diced

1 tbsp avocado or olive oil

1 tsp cumin

½ tsp chili powder

½ tsp paprika

Salt and pepper, to taste

Tortilla chips (enough to cover a baking tray)

1½ cups shredded Monterey Jack or Cheddar cheese

½ cup Oaxaca or mozzarella cheese (optional)
-
1 cup black beans, rinsed and drained (optional)

½ cup fresh salsa or diced tomatoes
-
¼ cup sliced jalapeños
-
¼ cup sliced black olives
-
¼ cup green onions, chopped
-
¼ cup fresh cilantro, chopped

Garnishes: guacamole, sour cream, lime wedges
Instructions

Prepare Beef Filling

Heat oil in a skillet over medium heat. Add diced onion and cook until softened.

Add ground beef, cumin, chili powder, paprika, salt, and pepper. Cook, breaking up meat, until browned. Drain excess fat.

Layer Chips and Beef

Preheat oven to 400°F (200°C).

Spread tortilla chips on a large baking sheet. Distribute cooked beef (and beans, if using) evenly over chips.

Cheese and Bake

Sprinkle cheese evenly over beef and chips.

Bake 8–10 minutes until cheese is melted and bubbly.

Finish and Serve

Top hot nachos with salsa or tomatoes, jalapeños, olives, green onions, and cilantro.

Serve with guacamole, sour cream, and lime wedges on the side.
