Nacho Cheese Beef

Ingredients

  • 1 lb (450g) ground beef

  • 1 small onion, finely diced

  • 1 tbsp avocado or olive oil

  • 1 tsp cumin

  • ½ tsp chili powder

  • ½ tsp paprika

  • Salt and pepper, to taste

  • Tortilla chips (enough to cover a baking tray)

  • 1½ cups shredded Monterey Jack or Cheddar cheese

  • ½ cup Oaxaca or mozzarella cheese (optional)

  • 1 cup black beans, rinsed and drained (optional)

  • ½ cup fresh salsa or diced tomatoes

  • ¼ cup sliced jalapeños

  • ¼ cup sliced black olives

  • ¼ cup green onions, chopped

  • ¼ cup fresh cilantro, chopped

  • Garnishes: guacamole, sour cream, lime wedges

Instructions

  1. Prepare Beef Filling

    • Heat oil in a skillet over medium heat. Add diced onion and cook until softened.

    • Add ground beef, cumin, chili powder, paprika, salt, and pepper. Cook, breaking up meat, until browned. Drain excess fat.

  2. Layer Chips and Beef

    • Preheat oven to 400°F (200°C).

    • Spread tortilla chips on a large baking sheet. Distribute cooked beef (and beans, if using) evenly over chips.

  3. Cheese and Bake

    • Sprinkle cheese evenly over beef and chips.

    • Bake 8–10 minutes until cheese is melted and bubbly.

  4. Finish and Serve

    • Top hot nachos with salsa or tomatoes, jalapeños, olives, green onions, and cilantro.

    • Serve with guacamole, sour cream, and lime wedges on the side.
