One Pan Chicken Caprese 🍗🍅🧀🌿✨
Ingredients (Serves 4)

4 boneless, skinless chicken breasts

2 tbsp olive oil

Salt & black pepper, to taste

2 tsp Italian seasoning
-
2 cloves garlic, minced
-
1 cup cherry tomatoes, halved
-
8 oz fresh mozzarella, sliced (or mozzarella pearls)
-
2 tbsp balsamic glaze (store-bought or homemade)
-
Fresh basil leaves, for garnish
Instructions

Cook the chicken:

Season chicken breasts with salt, pepper, and Italian seasoning.

Heat olive oil in a large skillet over medium-high heat.

Sear chicken 5–6 minutes per side, until golden and cooked through (internal temp 165°F / 74°C). Remove chicken and set aside.

Sauté tomatoes:
-
In the same skillet, add garlic and cherry tomatoes.

Cook 2–3 minutes until tomatoes are softened and slightly blistered.

Assemble Caprese chicken:
-
Return chicken to the skillet.
-
Top each piece with sliced mozzarella.

Cover the pan for 2–3 minutes, until cheese is melted.

Finish & serve:
-
Drizzle balsamic glaze over chicken and tomatoes.

Garnish with fresh basil leaves.

Serve hot with pasta, rice, or crusty bread.
