One Pan Chicken Caprese 🍗🍅🧀🌿✨

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • Salt & black pepper, to taste

  • 2 tsp Italian seasoning

  • 2 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 8 oz fresh mozzarella, sliced (or mozzarella pearls)

  • 2 tbsp balsamic glaze (store-bought or homemade)

  • Fresh basil leaves, for garnish


Instructions

  1. Cook the chicken:

    • Season chicken breasts with salt, pepper, and Italian seasoning.

    • Heat olive oil in a large skillet over medium-high heat.

    • Sear chicken 5–6 minutes per side, until golden and cooked through (internal temp 165°F / 74°C). Remove chicken and set aside.

  2. Sauté tomatoes:

    • In the same skillet, add garlic and cherry tomatoes.

    • Cook 2–3 minutes until tomatoes are softened and slightly blistered.

  3. Assemble Caprese chicken:

    • Return chicken to the skillet.

    • Top each piece with sliced mozzarella.

    • Cover the pan for 2–3 minutes, until cheese is melted.

  4. Finish & serve:

    • Drizzle balsamic glaze over chicken and tomatoes.

    • Garnish with fresh basil leaves.

    • Serve hot with pasta, rice, or crusty bread.
