One-Pan Chicken Gnocchi

Ingredients:

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 2 tbsp olive oil or butter

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup sliced mushrooms (optional)

  • 1 cup baby spinach

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 (16 oz) package potato gnocchi (uncooked)

  • 1 tsp Italian seasoning

  • Salt and black pepper to taste

  • Red pepper flakes (optional, for heat)

Instructions:

  1. Cook chicken: In a large skillet, heat olive oil or butter over medium heat. Add chicken pieces, season with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through. Remove and set aside.

  2. Sauté aromatics: In the same skillet, add onion and garlic (and mushrooms, if using). Sauté until softened and fragrant.

  3. Add liquids and gnocchi: Pour in the chicken broth and heavy cream. Stir well and bring to a gentle simmer. Add uncooked gnocchi directly to the skillet and cook for 5–7 minutes, stirring occasionally until tender and sauce thickens.

  4. Add spinach and cheese: Stir in spinach until wilted, then add Parmesan cheese. Return chicken to the skillet and mix until everything is coated in the creamy sauce.

  5. Serve: Garnish with extra Parmesan and a sprinkle of red pepper flakes if desired. Serve warm.
