One-Pan Pesto Tortellini with Cherry Tomatoes and Mozzarella

Description

Ingredients:

  • 1 package (9-12 oz) cheese tortellini, fresh or frozen

  • 1 tbsp olive oil

  • 2 cups cherry tomatoes, halved

  • 3 cloves garlic, minced

  • 1/2 cup basil pesto (store-bought or homemade)

  • 1 cup mozzarella balls (bocconcini) or shredded mozzarella

  • 1/4 cup grated Parmesan cheese

  • 1/4 cup fresh basil leaves, chopped

  • Salt and pepper to taste

  • Optional: pinch of red pepper flakes for heat


Instructions:

  1. Cook tortellini:

    • In a large skillet, bring 4 cups of water or broth to a boil.

    • Add tortellini and cook according to package instructions until al dente. Drain and set aside, reserving 1/4 cup cooking water.

  2. Sauté tomatoes and garlic:

    • In the same skillet, heat olive oil over medium heat.

    • Add garlic and sauté 30 seconds until fragrant.

    • Add cherry tomatoes and cook 3-4 minutes until they begin to soften.

  3. Combine tortellini and pesto:

    • Add cooked tortellini to the skillet with tomatoes.

    • Stir in pesto and reserved pasta water until the tortellini is evenly coated.

  4. Add cheese and garnish:

    • Mix in mozzarella and let it slightly melt.

    • Sprinkle with Parmesan, fresh basil, and red pepper flakes if using.

  5. Serve immediately:

    • Enjoy a creamy, cheesy, and flavorful one-pan meal!
