One-Pot Creamy Cajun Chicken and Rice

Ingredients

  • 2 tablespoons olive oil

  • 1½ lbs chicken breast or thighs, cut into chunks

  • 2 teaspoons Cajun seasoning

  • ½ teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon butter

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 3 cloves garlic, minced

  • 1 cup long-grain white rice (uncooked)

  • 2 cups chicken broth

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • Optional: chopped parsley or green onions for garnish


Instructions

  1. Heat olive oil in a large skillet or deep pan over medium-high heat.

  2. Season chicken with Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper.

  3. Sear chicken for 3–4 minutes per side until lightly browned. Remove and set aside.

  4. In the same pot, melt butter. Add onion and bell pepper; sauté for 3–4 minutes until soft.

  5. Stir in garlic and cook for 30 seconds until fragrant.

  6. Add rice and stir to coat in the flavors.

  7. Pour in chicken broth and heavy cream, stirring well.

  8. Return chicken to the pot. Bring to a gentle simmer.

  9. Cover, reduce heat to low, and cook for 18–20 minutes until rice is tender and chicken is cooked through.

  10. Stir in Parmesan cheese until creamy. Adjust seasoning as needed.

  11. Garnish with parsley or green onions before serving.
