One-Pot Irish Potato, Sausage & Onion Stew

Ingredients

  • 1 ½ lbs smoked or fresh Irish-style pork sausages (bangers work best), cut into chunks

  • 2 tbsp olive oil or butter

  • 2 large yellow onions, sliced

  • 4 cloves garlic, minced

  • 6 medium potatoes, peeled and cut into chunks

  • 3 large carrots, sliced

  • 3 cups chicken or beef stock

  • 2 bay leaves

  • 2 sprigs fresh thyme (or 1 tsp dried)

  • 1 tsp black pepper

  • ½ tsp salt (adjust to taste)

  • 2 tbsp fresh parsley, chopped (for garnish)


Instructions

  1. Brown the Sausage:

    • Heat olive oil or butter in a large heavy pot or Dutch oven over medium heat.

    • Add sausage pieces and brown on all sides. Remove and set aside.

  2. Cook the Onions:

    • In the same pot, add onions and cook until soft and golden, about 8 minutes.

    • Stir in garlic and cook another minute.

  3. Build the Stew:

    • Add potatoes and carrots, stirring to coat in the onion mixture.

    • Return sausages to the pot.

    • Pour in stock and Guinness (or extra broth).

    • Add bay leaves, thyme, pepper, and a little salt. Stir well.

  4. Simmer:

    • Bring to a boil, then reduce heat to low. Cover and simmer for 45–55 minutes, until potatoes are tender and the stew is hearty and thickened.

  5. Finish & Serve:

    • Taste and adjust seasoning.

    • Garnish with chopped parsley.

    • Serve hot with crusty Irish soda bread or a side of buttered rolls.
