Instructions
Preparing the Beef:
-
Pat beef dry and slice into thin strips against the grain.

In a bowl, toss beef with cornstarch, five-spice powder, salt, and pepper until evenly coated.
-
For extra tenderness, marinate the coated beef with orange zest and 2 tablespoons orange juice for 30 minutes.
Making the Sauce:
-
In a separate bowl, whisk together remaining orange juice, orange marmalade, soy sauce, oyster sauce, brown sugar, minced garlic, ginger, rice vinegar, and sesame oil.
-
Set aside until ready to use.
Cooking the Stir-Fry:
-
Heat oil in a large wok or skillet over high heat until smoking.
-
Add beef in a single layer and cook without stirring for 2-3 minutes until golden and crispy.
-
Stir and continue cooking for another 1-2 minutes until beef is cooked through.
-
If using bell peppers, add them now and stir-fry for 2 minutes.
-
Add white parts of scallions and cook for 30 seconds.
-
Pour in the orange sauce and bring to a rapid simmer.
-
Cook, stirring constantly, for 2-3 minutes until sauce thickens and glazes the beef.
-
Remove from heat and stir in green parts of scallions.
