Oven-Fried Green Tomatoes

Ingredients:

  • 3 medium green tomatoes, sliced ½-inch thick

  • ½ cup all-purpose flour

  • 2 large eggs, beaten

  • 1 cup panko breadcrumbs

  • ½ cup cornmeal

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • Cooking spray or olive oil


Instructions:

  1. Preheat oven: to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it.

  2. Set up dredging station:

    • Bowl 1: flour

    • Bowl 2: beaten eggs

    • Bowl 3: panko, cornmeal, garlic powder, paprika, salt, and pepper

  3. Coat tomatoes: Dip each slice in flour, then egg, then breadcrumb mixture. Press lightly so coating sticks.

  4. Bake: Place slices on prepared baking sheet. Lightly spray or brush tops with oil. Bake 20–25 minutes, flipping halfway, until golden brown and crispy.

  5. Serve: Enjoy hot with ranch, remoulade, or a spicy aioli for dipping.
