Oven-Fried Green Tomatoes
Ingredients:

3 medium green tomatoes, sliced ½-inch thick

½ cup all-purpose flour

2 large eggs, beaten

1 cup panko breadcrumbs

½ cup cornmeal
-
½ tsp garlic powder
-
½ tsp paprika
-
½ tsp salt
-
¼ tsp black pepper
-
Cooking spray or olive oil
Instructions:

Preheat oven: to 425°F (220°C). Line a baking sheet with parchment paper and lightly grease it.

Set up dredging station:

Bowl 1: flour

Bowl 2: beaten eggs

Bowl 3: panko, cornmeal, garlic powder, paprika, salt, and pepper

Coat tomatoes: Dip each slice in flour, then egg, then breadcrumb mixture. Press lightly so coating sticks.

Bake: Place slices on prepared baking sheet. Lightly spray or brush tops with oil. Bake 20–25 minutes, flipping halfway, until golden brown and crispy.

Serve: Enjoy hot with ranch, remoulade, or a spicy aioli for dipping.
