Parmesan Roasted Delicata Squash Rings

Ingredients

  • 2 medium delicata squash

  • 2 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp smoked paprika (optional)

  • Salt and black pepper, to taste

  • ½ cup grated Parmesan cheese

  • Optional garnish: chopped parsley or a squeeze of lemon

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

  2. Slice delicata squash into ½-inch rings. Scoop out the seeds from each ring.

  3. Toss the rings with olive oil, garlic powder, paprika, salt, and black pepper.

  4. Arrange on the baking sheet in a single layer.

  5. Sprinkle Parmesan evenly over the rings.

  6. Roast 20–25 minutes, flipping halfway, until golden and crispy at the edges.

  7. Serve warm with fresh parsley or lemon if desired.
