🦐 Pesto Shrimp with Mushrooms
Ingredients:

1 lb large shrimp, peeled and deveined

2 tbsp olive oil (divided)
-
3 cloves garlic, minced
-
8 oz mushrooms (cremini or button), sliced
-
½ cup basil pesto (store-bought or homemade)
-
¼ cup grated Parmesan cheese
-
2 tbsp fresh parsley or basil, chopped
-
Salt & black pepper, to taste

Optional: Cooked pasta, rice, or crusty bread for serving
Instructions:

Prepare the shrimp:

Pat shrimp dry and season lightly with salt and pepper.

Cook the mushrooms:

Heat 1 tbsp olive oil in a skillet over medium-high heat.

Add mushrooms and sauté until golden brown and tender (5–6 minutes). Remove and set aside.

Cook the shrimp:

In the same skillet, add remaining olive oil.
-
Add garlic and sauté for 30 seconds.
-
Add shrimp and cook 2–3 minutes per side until pink and opaque.

Combine:
-
Return mushrooms to skillet. Stir in pesto and toss to coat everything evenly.

Finish & serve:

Sprinkle with Parmesan and fresh herbs.

Serve hot over pasta, rice, or with crusty bread.
