🦐 Pesto Shrimp with Mushrooms

Ingredients:

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil (divided)

  • 3 cloves garlic, minced

  • 8 oz mushrooms (cremini or button), sliced

  • ½ cup basil pesto (store-bought or homemade)

  • ¼ cup grated Parmesan cheese

  • 2 tbsp fresh parsley or basil, chopped

  • Salt & black pepper, to taste

  • Optional: Cooked pasta, rice, or crusty bread for serving


Instructions:

  1. Prepare the shrimp:

    • Pat shrimp dry and season lightly with salt and pepper.

  2. Cook the mushrooms:

    • Heat 1 tbsp olive oil in a skillet over medium-high heat.

    • Add mushrooms and sauté until golden brown and tender (5–6 minutes). Remove and set aside.

  3. Cook the shrimp:

    • In the same skillet, add remaining olive oil.

    • Add garlic and sauté for 30 seconds.

    • Add shrimp and cook 2–3 minutes per side until pink and opaque.

  4. Combine:

    • Return mushrooms to skillet. Stir in pesto and toss to coat everything evenly.

  5. Finish & serve:

    • Sprinkle with Parmesan and fresh herbs.

    • Serve hot over pasta, rice, or with crusty bread.
