 Pineapple Rainbow Rush (Cocktail or Mocktail)

Bold, icy, and tropical — this vibrant slushie layers pineapple, coconut, and rainbow swirls into a visual treat that tastes as amazing as it looks. Whether you serve it spiked or alcohol-free, it’s guaranteed to turn heads and brighten any occasion.


🌴 Ingredients:

  • 2 oz pineapple juice

  • 2 oz cream of coconut

  • 1 oz grenadine (for red layer)

  • 1 oz blue curaçao syrup (non-alcoholic for mocktail, or use blue curaçao liqueur for cocktail)

  • 1½ cups crushed ice

  • A few drops each of yellow, red, and blue food coloring (to enhance layering effect)

  • Whipped cream (for topping)

  • Rainbow sour candy strip or pineapple wedge (for garnish)


🍹 Instructions:

  1. Prepare the Base Mixture:
    In a blender, combine pineapple juice, cream of coconut, and crushed ice. Blend until smooth and slushy.

  2. Divide & Color:
    Split the slush into three equal parts:

    • Yellow Layer: Add a few drops of yellow food coloring to one part.

    • Red Layer: Stir in grenadine and a drop of red food coloring to another part.

    • Blue Layer: Add blue curaçao syrup and a drop of blue food coloring to the last part.

  3. Layer the Drink:
    In a tall clear glass, gently spoon in each colored layer one at a time, starting with red, then yellow, and finally blue. Pour slowly to maintain clean layers. You can lightly swirl with a straw for a marbled rainbow effect.

  4. Top It Off:
    Add a generous swirl of whipped cream on top.

  5. Garnish:
    Finish with a rainbow sour candy strip draped over the rim or a pineapple wedge for a tropical touch.
