Piri Piri Grilled Shrimp with Roast Potatoes and Garlicky Swiss Chard
Ingredients
For the Roast Potatoes:

1.5 pounds Parisienne potatoes

3 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1/2 teaspoon kosher salt

1/2 teaspoon dried oregano
For the Garlicky Swiss Chard:

1 large bunch green Swiss chard, roughly chopped

2 tablespoons extra virgin olive oil

2 cloves garlic, thinly sliced

1/2 teaspoon dried red chile flakes

Juice of 1/2 lemon

Kosher salt to taste
For the Piri Piri Shrimp:

1 pound 6/8 tiger shrimp, deveined and shell-on

1 small yellow onion
-
1/4 cup extra virgin olive oil

Juice of 1/2 lemon, plus extra wedges for serving

4 garlic cloves, peeled
-
2 fresh red finger chiles
-
1 1-inch piece fresh ginger, peeled

1 tablespoon kosher salt
-
1 teaspoon smoked paprika
-
1 teaspoon sweet paprika
-
1 teaspoon dried oregano
-
1/2 teaspoon cayenne pepper
Instructions
Prepare the Roast Potatoes:

Preheat oven to 425°F

Toss Parisienne potatoes with olive oil, smoked paprika, salt, and oregano

Spread on a baking sheet and roast for 25-30 minutes until golden and crispy
Make the Piri Piri Marinade:

Preheat grill to 500°F

In a blender, combine onion, olive oil, lemon juice, garlic, chiles, ginger, salt, smoked paprika, sweet paprika, oregano, and cayenne

Blend until smooth to create the piri piri sauce

Reserve half the sauce for serving
Prepare the Shrimp:

Toss shrimp with half the piri piri sauce in a bowl

Marinate for 20 minutes in the refrigerator

Make the Garlicky Swiss Chard:
