Potato and Carrot Layer Bake
Ingredients

3 medium potatoes, peeled and thinly sliced

3 medium carrots, peeled and thinly sliced

1 small onion, thinly sliced

1 cup grated cheese (cheddar, Gruyère, or mozzarella)

1 cup heavy cream or milk

2 cloves garlic, minced
-
2 tbsp butter, for greasing the dish

½ tsp dried thyme
-
Salt and pepper, to taste

Fresh parsley, chopped, for garnish
Instructions

Preheat oven:
Preheat oven to 375°F (190°C) and butter a baking dish. -
Layer vegetables:
Arrange a layer of potato slices, then carrots, then onions in the dish. Sprinkle with garlic, thyme, salt, and pepper. Repeat until all vegetables are layered. -
Add cream and cheese:
Pour cream or milk over the layers. Top with grated cheese. -
Bake:
Cover with foil and bake for 35–40 minutes. Remove foil and bake another 15 minutes, until vegetables are tender and the top is golden brown. -
Serve:
Let rest 5 minutes before serving. Garnish with fresh parsley.
