Potato and Carrot Layer Bake

Ingredients

  • 3 medium potatoes, peeled and thinly sliced

  • 3 medium carrots, peeled and thinly sliced

  • 1 small onion, thinly sliced

  • 1 cup grated cheese (cheddar, Gruyère, or mozzarella)

  • 1 cup heavy cream or milk

  • 2 cloves garlic, minced

  • 2 tbsp butter, for greasing the dish

  • ½ tsp dried thyme

  • Salt and pepper, to taste

  • Fresh parsley, chopped, for garnish


Instructions

  1. Preheat oven:
    Preheat oven to 375°F (190°C) and butter a baking dish.

  2. Layer vegetables:
    Arrange a layer of potato slices, then carrots, then onions in the dish. Sprinkle with garlic, thyme, salt, and pepper. Repeat until all vegetables are layered.

  3. Add cream and cheese:
    Pour cream or milk over the layers. Top with grated cheese.

  4. Bake:
    Cover with foil and bake for 35–40 minutes. Remove foil and bake another 15 minutes, until vegetables are tender and the top is golden brown.

  5. Serve:
    Let rest 5 minutes before serving. Garnish with fresh parsley.
