Calories: ~610 per serving
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes

Ingredients:

  • 12 oz (340g) penne pasta (or any short pasta)

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 2 cups milk

  • 1 cup heavy cream

  • 1 (1 oz) packet ranch seasoning mix

  • 1 cup shredded mozzarella cheese

  • 1 cup shredded cheddar cheese

  • 2 cups cooked chicken breast, diced or shredded

  • 6 slices bacon, cooked and crumbled

  • Salt and black pepper, to taste

  • 2 tablespoons chopped green onions (optional, for garnish)

Instructions:

  1. Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  2. Cook the Pasta:
Cook pasta according to package directions until al dente. Drain and set aside.

  3. Make the Ranch Sauce:
In a large skillet, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk and cream until smooth and thickened, about 4–5 minutes. Stir in ranch seasoning mix, salt, and pepper.

  4. Add the Cheese:
Stir in half of the mozzarella and cheddar cheeses until melted and creamy.

  5. Combine:
Add cooked pasta, chicken, and half the bacon to the sauce. Stir until everything is evenly coated.

  6. Bake:
Pour mixture into the prepared baking dish. Sprinkle the remaining cheese and bacon over the top. Bake for 20–25 minutes, or until bubbly and golden on top.

  7. Garnish and Serve:
Remove from oven, sprinkle with chopped green onions if desired, and serve warm.
