Ribeye Steak Bites and Cheesy Smashed Potatoes

Ingredients

For the ribeye steak bites:

  • 1 1/2-2 lbs ribeye steak, cut into 1-inch cubes

  • 3 tablespoons avocado oil or olive oil

  • 3 tablespoons unsalted butter

  • 4 garlic cloves, crushed

  • 1/2 tablespoon fresh rosemary, chopped

  • 1/2 tablespoon fresh thyme, chopped

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

For the cheesy smashed potatoes:

  • 2 lbs small baby potatoes or fingerling potatoes

  • 3 tablespoons olive oil

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 3 cloves garlic, minced

  • 1/4 cup fresh chives, chopped

  • 1/2 teaspoon garlic powder

  • Salt and pepper to taste

  • 2 tablespoons butter, melted

Instructions

Step 1: Prepare potatoes
Preheat oven to 450°F. Boil whole potatoes in salted water for 20-25 minutes until fork-tender. Drain and let cool slightly.

Step 2: Smash and season potatoes
Place potatoes on a large baking sheet. Using a potato masher or fork, gently smash each potato to about 1/2-inch thick. Drizzle with olive oil and melted butter. Season with salt, pepper, and garlic powder.

Step 3: First bake for potatoes
Bake potatoes for 20-25 minutes until edges are crispy and golden brown.

Step 4: Prepare steak bites
While potatoes bake, cut ribeye into 1-inch cubes. Season evenly with salt and pepper.

Step 5: Cook steak bites
Heat avocado oil in a cast iron skillet over high heat until smoking. Add steak cubes in a single layer, avoiding overcrowding. Cook for 2-3 minutes, stirring occasionally.

Step 6: Add aromatics to steak
Add butter, crushed garlic, rosemary, and thyme to the skillet with steak. Using a spoon, baste the steak bites with the garlic herb butter for about 1 minute.

Step 7: Add cheese to potatoes
Remove potatoes from oven and sprinkle with cheddar and mozzarella cheeses. Return to oven for 5-7 minutes until cheese is melted and bubbly.

Step 8: Serve
Remove both from heat. Garnish smashed potatoes with minced garlic and fresh chives. Serve steak bites and cheesy smashed potatoes together while hot.
