Ribeye Steak with French Onions and French Fries

Ingredients

For the Ribeye Steak

  • 2 ribeye steaks (10-12 oz each), about 1-inch thick

  • Salt and freshly ground black pepper to taste

  • 2 teaspoons olive oil or avocado oil

  • 2 tablespoons butter

  • 2 cloves garlic, crushed

  • 2 sprigs fresh rosemary or thyme (optional)

For the French Onions

  • 2 large yellow onions, thinly sliced into rings

  • 2 tablespoons unsalted butter

  • 1 tablespoon olive oil

  • 1 teaspoon sugar

  • Salt to taste

  • 1/2 cup beef broth or water to deglaze

For the French Fries

  • 4 large Russet potatoes, peeled and cut into fries

  • Vegetable oil for frying

  • Salt to taste

Instructions

Prepare French Fries:

  1. Soak cut potatoes in cold water for 30 minutes, then drain and pat dry.

  2. Heat oil in a deep fryer or large pot to 350°F. Fry potatoes in batches for about 4-5 minutes until soft but not browned. Drain and let cool.

  3. Increase oil temperature to 375°F, then fry potatoes again in batches for 2-3 minutes until crispy and golden. Drain on paper towels and season with salt.

Prepare French Onions:

  1. Heat butter and olive oil in a skillet over medium heat.

  2. Add sliced onions and sugar, cook slowly, stirring frequently, for about 15-20 minutes until onions are soft and caramelized.

  3. Season with salt and deglaze the pan with beef broth, scraping up any browned bits. Cook until the liquid reduces.

Cook Ribeye Steaks:

  1. Let the ribeye steaks come to room temperature for 20-30 minutes.

  2. Season both sides generously with salt and black pepper.

  3. Heat a cast iron skillet over medium-high heat and add oil.

  4. Sear steaks for 3-4 minutes on each side to develop a crust.

  5. Add butter, garlic, and herbs to the pan; baste steaks by spooning melted butter on top while cooking for another 1-2 minutes.

  6. Remove steaks and rest under foil for 5-10 minutes.

Serve:

  • Plate ribeye steaks topped with caramelized French onions.

  • Serve crispy French fries on the side for a complete meal.
