Roasted Beet and Feta Salad

Ingredients

  • 4 medium beets, peeled and cut into wedges

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 4 cups mixed salad greens (arugula, spinach, or your choice)

  • ½ cup crumbled feta cheese

  • ¼ cup toasted walnuts or pecans

  • 2 tbsp balsamic glaze or balsamic vinegar

  • Optional: 1 small red onion, thinly sliced


Instructions

  1. Roast the beets:
    Preheat oven to 400°F (200°C). Toss beet wedges with olive oil, salt, and pepper. Spread on a baking sheet and roast 30–35 minutes, until tender. Allow to cool slightly.

  2. Assemble salad:
    In a large bowl, combine salad greens, roasted beets, crumbled feta, nuts, and red onion if using.

  3. Dress the salad:
    Drizzle with balsamic glaze or vinegar and toss gently to combine.

  4. Serve:
    Serve immediately as a fresh, colorful, and nutritious salad.


Optional Add-Ins

  • Orange or apple segments for sweetness

  • Avocado slices for creaminess

  • A sprinkle of fresh herbs like parsley or mint
