Roasted Beet and Feta Salad
Ingredients

4 medium beets, peeled and cut into wedges

2 tbsp olive oil

Salt and pepper, to taste

4 cups mixed salad greens (arugula, spinach, or your choice)

½ cup crumbled feta cheese

¼ cup toasted walnuts or pecans

2 tbsp balsamic glaze or balsamic vinegar

Optional: 1 small red onion, thinly sliced
Instructions

Roast the beets:
Preheat oven to 400°F (200°C). Toss beet wedges with olive oil, salt, and pepper. Spread on a baking sheet and roast 30–35 minutes, until tender. Allow to cool slightly. -
Assemble salad:
In a large bowl, combine salad greens, roasted beets, crumbled feta, nuts, and red onion if using. -
Dress the salad:
Drizzle with balsamic glaze or vinegar and toss gently to combine. -
Serve:
Serve immediately as a fresh, colorful, and nutritious salad.
