1 can chickpeas, drained and rinsed

4 cups romaine lettuce, chopped

1/4 cup grated Parmesan

Instructions:

Preheat oven to 425°F (220°C). Toss cauliflower and chickpeas with olive oil, paprika, salt, and pepper. Roast 20–25 minutes until crispy.

In a bowl, combine lettuce, roasted cauliflower, and chickpeas. Sprinkle Parmesan and drizzle with Caesar dressing. Serve immediately.
Notes: Add croutons for extra crunch.
