Roasted Sweet Potato Rounds with Honey and Feta

Ingredients

  • 2-3 large sweet potatoes, washed and sliced into ½-¾ inch thick rounds

  • 2-3 tablespoons olive oil or avocado oil

  • 1¼ teaspoons kosher salt

  • ½ teaspoon freshly ground black pepper

  • 4-6 oz feta cheese, crumbled

  • ⅓ cup honey

  • 1 cup pomegranate seeds (optional)

  • Fresh thyme for garnish

  • 1 teaspoon fresh orange zest (optional)

Instructions

  1. Preheat oven to 400-425°F (200-220°C)

  2. Wash sweet potatoes thoroughly and slice into ½ to ¾-inch thick rounds, leaving skin on

  3. In a large bowl, combine olive oil, salt, pepper, and orange zest if using. Add sweet potato rounds and toss to coat evenly

  4. Arrange sweet potato rounds in a single layer on a greased or lined baking sheet, leaving space between each piece

  5. Roast for 10-12 minutes until the bottom is golden brown

  6. Carefully flip the rounds using a spatula and continue roasting for another 10-15 minutes until golden and tender

  7. Remove from oven and transfer to a serving platter

  8. Top each round with crumbled feta cheese

  9. Drizzle generously with honey over each topped round

  10. Sprinkle with pomegranate seeds if using and garnish with fresh thyme

  11. Serve immediately while warm
