Rosemary Grilled Lamb Chops with Mint Apple Sauce

Ingredients

For the Lamb Chops:

  • 8 lamb chops (about 1 inch thick)

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 2 tablespoons fresh rosemary, finely chopped

  • 1 teaspoon thyme (optional)

  • Salt and black pepper, to taste

  • 1 tablespoon lemon juice

For the Mint Apple Sauce:

  • 2 green apples, peeled and diced

  • ¼ cup water

  • 2 tablespoons sugar (or honey)

  • 1 tablespoon lemon juice

  • ¼ cup fresh mint leaves, finely chopped

  • A pinch of salt


Instructions

  1. Prepare the Lamb Marinade
    In a bowl, mix olive oil, garlic, rosemary, thyme, lemon juice, salt, and pepper.
    Rub the mixture over the lamb chops and marinate for at least 1 hour (or overnight) in the refrigerator.

  2. Make the Mint Apple Sauce
    In a small saucepan, combine diced apples, water, sugar (or honey), and lemon juice.
    Simmer over medium heat for 10–12 minutes until apples are soft.
    Remove from heat, mash slightly, and stir in fresh mint and a pinch of salt. Set aside.

  3. Grill the Lamb Chops
    Preheat grill (or grill pan) to medium-high heat.
    Grill the chops for 3–4 minutes per side for medium-rare, or longer to your liking.
    Brush with leftover marinade while grilling for extra flavor.

  4. Rest and Serve
    Remove chops from the grill and let rest for 5 minutes before serving.
    Serve warm with a generous spoonful of Mint Apple Sauce on top or on the side.
