Sautéed Kale with Garlic and Cranberries
Ingredients

1 large bunch kale, stems removed and leaves chopped

2 tbsp olive oil

3 cloves garlic, thinly sliced

½ cup dried cranberries

¼ cup vegetable or chicken broth (optional, helps soften kale)

Salt & black pepper, to taste

1 tbsp lemon juice or apple cider vinegar (optional, for brightness)
Instructions

Heat olive oil in a large skillet over medium heat.

Add the sliced garlic and sauté for 30–45 seconds, until fragrant and lightly golden.

Add the chopped kale and toss to coat in the garlic oil.

Pour in the broth (if using) and cook for 4–6 minutes, stirring occasionally, until the kale softens and turns bright green.

Stir in the dried cranberries and cook 1–2 more minutes.

Season with salt, pepper, and a splash of lemon juice or vinegar.

Serve warm.
