Savory Beef & Melted Cheese Potato Cakes

Ingredients

  • 2 pounds potatoes, peeled and cubed

  • 1 large egg

  • 1 cup all-purpose flour, plus extra for dusting

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 pound ground beef

  • 1 small onion, finely chopped

  • 1 cup shredded cheese (Cheddar, mozzarella, or your favorite melting cheese)

  • 2 cloves garlic, minced

  • 2 tablespoons oil for frying

Instructions

  1. Boil the peeled and cubed potatoes in salted water until tender, about 15-20 minutes. Drain and mash until smooth. Set aside to cool slightly.

  2. In a skillet over medium heat, cook the ground beef with onion and garlic until the beef is browned and onions are soft. Drain excess fat. Season with salt and pepper.

  3. In a large bowl, combine the mashed potatoes, egg, flour, salt, and pepper to form a dough.

  4. Divide the dough into small portions. Flatten each portion into a patty, place a spoonful of the cooked beef mixture and a sprinkle of shredded cheese in the center, then cover with another layer of potato dough. Seal edges well and gently flatten.

  5. Heat oil in a skillet over medium heat. Fry the potato cakes until golden brown and crispy on both sides, about 4-5 minutes per side.

  6. Remove from skillet and drain on paper towels. Serve hot, allowing the cheese to be melted inside the savory potato cakes.
