Skillet BBQ Chicken & Cheesy Corn
Ingredients
Chicken:

4 boneless, skinless chicken breasts or thighs

1 tablespoon olive oil

Salt and pepper to taste

¼ cup BBQ sauce
Corn Base:

2 cups fresh corn kernels (or 1 can corn, drained)

1 cup diced onion
-
1 red bell pepper, diced
-
2 cloves garlic, minced
-
1 jalapeño, seeded and diced (optional)
Creamy Sauce:
-
½ cup heavy cream
-
2 tablespoons mayonnaise
-
1 teaspoon chili powder
-
1 teaspoon garlic powder
-
½ teaspoon paprika
Cheese & Garnish:
-
1½ cups shredded cheddar or Mexican blend cheese
-
¼ cup fresh cilantro, chopped
-
2 green onions, sliced
-
Fresh lime juice
Instructions
Prepare Chicken:

Heat olive oil in a large cast iron or oven-safe skillet over medium-high heat

Season chicken breasts with salt and pepper on both sides

Cook chicken 5-6 minutes per side until golden brown and cooked through

Brush with BBQ sauce during the last minute of cooking

Remove chicken from skillet and set aside
Make Corn Base:
6. In the same skillet, add diced onion and cook for 3-4 minutes until softened
7. Add bell pepper and jalapeño, cook another 4-5 minutes
8. Add garlic and cook for 1 minute until fragrant
9. Stir in corn kernels and cook for 2-3 minutes
Create Sauce:
10. Reduce heat to low and add heavy cream, mayonnaise, chili powder, garlic powder, and paprika
11. Stir until well combined and heated through, about 2-3 minutes
12. Season with salt and pepper to taste
Final Assembly:
13. Nestle the cooked chicken back into the skillet with the creamy corn mixture
14. Top with shredded cheese and cover until melted, about 2-3 minutes
15. Garnish with fresh cilantro, green onions, and a squeeze of lime juice
16. Serve immediately while hot
