Skillet Churrasco with Garlic Butter

Ingredients:

  • 2 lbs flank steak (or skirt steak)

  • 2 tbsp olive oil

  • 1 tbsp fresh lime juice

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1 tsp kosher salt

  • ½ tsp black pepper

Garlic Butter:

  • 4 tbsp unsalted butter, softened

  • 4 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped

  • ½ tsp crushed red pepper flakes (optional)

  • Pinch of flaky sea salt


Instructions:

  1. Marinate the Steak:

    • In a small bowl, whisk together olive oil, lime juice, smoked paprika, cumin, chili powder, salt, and pepper.

    • Rub marinade over the flank steak and let sit for at least 30 minutes (or up to 4 hours in the fridge).

  2. Make Garlic Butter:

    • Mix softened butter with garlic, parsley, red pepper flakes, and a pinch of salt. Set aside.

  3. Cook the Steak:

    • Heat a large cast-iron skillet over high heat until very hot.

    • Add a drizzle of oil, then sear steak 4–5 minutes per side for medium-rare, or to desired doneness.

  4. Finish with Garlic Butter:

    • Remove steak from heat, top with dollops of garlic butter, and let rest 5–10 minutes.

    • Slice against the grain into thin strips.

  5. Serve:

    • Serve with chimichurri, roasted potatoes, or grilled vegetables for a full churrasco-style meal.
