Skillet Creamy Cajun Chicken and Rice
Ingredients

1 lb chicken breasts or thighs, cut into small pieces

1 tbsp olive oil
-
1 tbsp butter
-
1 ½ tbsp Cajun seasoning
-
1 tsp garlic powder
-
Salt & pepper to taste
-
1 small onion, diced
-
1 red bell pepper, diced
-
3–4 garlic cloves, minced
-
1 cup long-grain white rice (uncooked)
-
2 cups chicken broth
-
1 cup heavy cream
-
½ cup shredded cheddar or Monterey Jack
-
1 cup spinach (optional)
-
Green onions for topping
Instructions
-
Season & Cook Chicken
In a large skillet, heat olive oil + butter.
Add chicken, Cajun seasoning, garlic powder, salt & pepper.
Cook 6–7 minutes until browned and cooked through.
Remove and set aside. -
Sauté Veggies
In the same skillet, add onion, bell pepper, and garlic.
Cook 3–4 minutes until softened. -
Toast the Rice
Add uncooked rice to the skillet and stir for 1 minute to coat in the flavor. -
Add Liquids & Simmer
Pour in chicken broth and heavy cream.
Stir, bring to a simmer, cover, and cook 15–18 minutes until rice is tender. -
Finish the Skillet
Stir in the cooked chicken, cheese, and spinach.
Let the cheese melt and sauce thicken for 2–3 minutes. -
Serve
Top with green onions and extra Cajun seasoning if you want extra heat.
