Skillet Creamy Cajun Chicken and Rice

Ingredients

  • 1 lb chicken breasts or thighs, cut into small pieces

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 ½ tbsp Cajun seasoning

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • 1 small onion, diced

  • 1 red bell pepper, diced

  • 3–4 garlic cloves, minced

  • 1 cup long-grain white rice (uncooked)

  • 2 cups chicken broth

  • 1 cup heavy cream

  • ½ cup shredded cheddar or Monterey Jack

  • 1 cup spinach (optional)

  • Green onions for topping


Instructions

  1. Season & Cook Chicken
    In a large skillet, heat olive oil + butter.
    Add chicken, Cajun seasoning, garlic powder, salt & pepper.
    Cook 6–7 minutes until browned and cooked through.
    Remove and set aside.

  2. Sauté Veggies
    In the same skillet, add onion, bell pepper, and garlic.
    Cook 3–4 minutes until softened.

  3. Toast the Rice
    Add uncooked rice to the skillet and stir for 1 minute to coat in the flavor.

  4. Add Liquids & Simmer
    Pour in chicken broth and heavy cream.
    Stir, bring to a simmer, cover, and cook 15–18 minutes until rice is tender.

  5. Finish the Skillet
    Stir in the cooked chicken, cheese, and spinach.
    Let the cheese melt and sauce thicken for 2–3 minutes.

  6. Serve
    Top with green onions and extra Cajun seasoning if you want extra heat.
