Skinny Buffalo Chicken Strips

Ingredients

  • 1 lb (450 g) chicken breast tenders

  • ½ cup whole wheat flour (or all-purpose for classic)

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 egg, beaten

  • ½ cup panko breadcrumbs

  • ¼ cup buffalo sauce (plus extra for drizzling)

  • Cooking spray or olive oil spray

Optional for Serving:

  • Celery sticks

  • Light ranch or blue cheese dressing


Instructions

  1. Preheat Oven
    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.

  2. Prepare the Coating
    In one bowl, combine flour, garlic powder, paprika, salt, and pepper.
    In another bowl, place the beaten egg.
    In a third bowl, add panko breadcrumbs.

  3. Coat the Chicken
    Dip each chicken strip in flour, then egg, then panko, pressing lightly to adhere.

  4. Bake the Chicken
    Arrange coated strips on the baking sheet and lightly spray tops with cooking spray.
    Bake for 15–20 minutes, flipping halfway, until golden and cooked through.

  5. Toss in Buffalo Sauce
    In a large bowl, toss the baked chicken strips with buffalo sauce until evenly coated.

  6. Serve
    Serve hot with celery sticks and a side of light ranch or blue cheese dressing for dipping.
