Slow Cooker BBQ Pulled Beef Sandwiches

Ingredients:

  • 3 lbs beef chuck roast

  • 1 large onion, sliced

  • 1 cup BBQ sauce (plus more for serving)

  • ½ cup beef broth

  • ¼ cup brown sugar

  • 2 tbsp apple cider vinegar

  • 1 tbsp Worcestershire sauce

  • 1 tbsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and black pepper, to taste

  • 8 sandwich buns

  • Optional: coleslaw for topping

Instructions:

  1. Prepare the Beef:

    • Season beef roast with salt, pepper, paprika, garlic powder, and onion powder.

    • Place sliced onions in the bottom of the slow cooker, then add the beef on top.

  2. Add the Sauce:

    • In a bowl, whisk together BBQ sauce, beef broth, brown sugar, vinegar, and Worcestershire sauce.

    • Pour mixture over the beef.

  3. Slow Cook:

    • Cover and cook on Low for 8–10 hours or High for 4–5 hours, until beef is tender and easily shredded.

  4. Shred and Sauce:

    • Remove beef and shred with two forks.

    • Return shredded beef to the slow cooker and mix with the juices.

  5. Assemble Sandwiches:

    • Toast buns if desired.

    • Pile BBQ beef high on each bun, drizzle with extra BBQ sauce, and top with coleslaw for crunch.
