Slow Cooker Bourbon Chicken

Prep Time: 10 minutes

Cook Time: 4 hours (on low) or 2½ hours (on high)

Ingredients

  • 2 lbs boneless skinless chicken thighs, cut into bite-size pieces

  • ½ cup soy sauce

  • ½ cup brown sugar

  • ⅓ cup ketchup

  • ¼ cup bourbon (or apple juice if avoiding alcohol)

  • ¼ cup apple cider vinegar

  • 3 cloves garlic, minced

  • 1 tbsp ginger, grated

  • 1 tbsp cornstarch

  • ¼ cup water

  • 2 tbsp honey

  • ½ tsp crushed red pepper

  • 1 tbsp sesame oil (optional, for richness)

  • Sesame seeds + sliced green onions for garnish


Instructions

  1. Add chicken to the slow cooker.
    Place the chicken thighs evenly at the bottom.

  2. Whisk the sauce.
    In a bowl combine soy sauce, brown sugar, ketchup, bourbon, apple cider vinegar, garlic, ginger, honey, crushed red pepper, and sesame oil if using.

  3. Pour over the chicken in the slow cooker.

  4. Cook:

    • LOW: 4 hours

    • HIGH: 2½ hours
      Chicken should be very tender.

  5. Thicken the sauce.
    Mix cornstarch + water, pour into the slow cooker, stir, and cook an additional 15 minutes until glossy and thick.

  6. Serve over steamed rice with sesame seeds and green onions.
