Slow Cooker Creamy Cajun Shrimp Pasta

Ingredients:

  • 1 lb large shrimp, peeled and deveined

  • 12 oz fettuccine or penne pasta (uncooked)

  • 2 tbsp olive oil

  • 3 cups heavy cream

  • 1 cup chicken broth

  • 1 tbsp Cajun seasoning (plus more to taste)

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ cup grated Parmesan cheese

  • 4 oz cream cheese, softened

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 2 tbsp butter

  • Chopped parsley, for garnish


Instructions:

  1. In the slow cooker, add heavy cream, chicken broth, Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper. Stir to combine.

  2. Add sliced bell peppers and cream cheese. Cover and cook on LOW for 2–3 hours, stirring occasionally until the sauce is smooth.

  3. Stir in the uncooked pasta, ensuring it’s submerged in the liquid. Cook on HIGH for 45–60 minutes, stirring occasionally until the pasta is tender.

  4. In a skillet, heat olive oil and butter over medium heat. Add shrimp and cook 1–2 minutes per side until pink and cooked through.

  5. Add the cooked shrimp and Parmesan cheese to the slow cooker. Stir to combine and let it sit for 5 minutes to thicken.

  6. Garnish with chopped parsley and a sprinkle of extra Cajun seasoning before serving.
