Slow Cooker Creamy Garlic Beef Stroganoff

Ingredients:

  • 2 lbs beef stew meat or sirloin, cut into bite-sized pieces

  • 1 medium onion, chopped

  • 4 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 1 cup beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp Dijon mustard

  • 1 tsp paprika

  • Salt and black pepper, to taste

  • 1 cup sour cream

  • 2 tbsp all-purpose flour (optional, for thickening)

  • 2 tbsp chopped parsley, for garnish

  • Cooked egg noodles or rice, for serving

Instructions:

  1. Prepare the Slow Cooker:

    • Place beef, onion, garlic, and mushrooms in the slow cooker.

  2. Add Liquid and Seasonings:

    • Pour in beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Stir to combine.

  3. Cook:

    • Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender.

  4. Thicken the Sauce (Optional):

    • If desired, whisk 2 tbsp flour into ½ cup sour cream. Stir into the slow cooker and cook on HIGH for 10–15 minutes until sauce is creamy and thickened.

  5. Add Sour Cream:

    • Stir in remaining sour cream until fully incorporated.

  6. Serve:

    • Serve hot over cooked egg noodles or rice. Garnish with chopped parsley.
