Slow Cooker Creamy Garlic Beef Stroganoff
Ingredients:

2 lbs beef stew meat or sirloin, cut into bite-sized pieces

1 medium onion, chopped

4 cloves garlic, minced

8 oz mushrooms, sliced

1 cup beef broth
-
1 tbsp Worcestershire sauce
-
1 tsp Dijon mustard
-
1 tsp paprika
-
Salt and black pepper, to taste

1 cup sour cream
-
2 tbsp all-purpose flour (optional, for thickening)

2 tbsp chopped parsley, for garnish

Cooked egg noodles or rice, for serving
Instructions:

Prepare the Slow Cooker:

Place beef, onion, garlic, and mushrooms in the slow cooker.

Add Liquid and Seasonings:

Pour in beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper. Stir to combine.

Cook:

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender.

Thicken the Sauce (Optional):

If desired, whisk 2 tbsp flour into ½ cup sour cream. Stir into the slow cooker and cook on HIGH for 10–15 minutes until sauce is creamy and thickened.

Add Sour Cream:

Stir in remaining sour cream until fully incorporated.
