Slow Cooker French Onion Pot Roast

Ingredients

For the Pot Roast

  • 3–4 lb (1.3–1.8 kg) chuck roast

  • 2 tbsp olive oil

  • 2 large yellow onions, thinly sliced

  • 4 garlic cloves, minced

  • 1 tbsp Worcestershire sauce

  • 1 packet French onion soup mix (or 3 tbsp homemade mix)

  • 3 cups beef broth

  • 2 tbsp butter

  • 3–4 fresh thyme sprigs (or 1 tsp dried)

  • Salt & pepper, to taste

Optional Add-Ins

  • 1 cup sliced mushrooms

  • 3–4 carrots, cut into chunks

  • 3–4 potatoes, cubed

To Serve

  • Fresh thyme

  • Toasted baguette slices

  • Melted Gruyère or Swiss cheese (optional but amazing!)


Instructions

1. Sear the Roast

  1. Pat the roast dry and season generously with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Sear the roast on all sides until deeply browned (about 3–4 minutes per side).

  4. Transfer to the slow cooker.


2. Caramelize the Onions

  1. In the same skillet, melt the butter.

  2. Add onions and cook 6–8 minutes until softened and golden.

  3. Add garlic and cook 1 more minute.

  4. Transfer mixture over the roast.


3. Build the Slow Cooker

  1. Pour beef broth and Worcestershire over the roast.

  2. Sprinkle the French onion soup mix on top.

  3. Add thyme and optional veggies.


4. Slow Cook

Cook on:

  • LOW: 8–9 hours (best tenderness)

  • HIGH: 5–6 hours

Roast should fall apart easily with a fork.


5. Serve

Serve pot roast with caramelized onions and broth spooned on top.
Optional but DELICIOUS:

  • Add slices of toasted baguette topped with melted Gruyère to mimic classic French onion soup.

  • Serve over mashed potatoes, egg noodles, or roasted vegetables.


Notes

  • For a thicker gravy: whisk 1 tbsp cornstarch + 2 tbsp water, stir into juices, and cook 10 minutes on HIGH.

  • Add ½ cup red wine for deeper flavor.

  • Replace chuck roast with brisket or top round if preferred.

  • Store leftovers up to 4 days or freeze up to 3 months.
