Slow Cooker Garlic Butter Beef and Potatoes
Ingredients

2 lbs beef stew meat (or chuck roast cut into chunks)

1.5 lbs baby potatoes, halved

1 small onion, sliced

6 garlic cloves, minced

6 tbsp butter, melted

1 tbsp olive oil
-
1 tbsp Worcestershire sauce

1 tsp paprika
-
1 tsp dried thyme
-
1 tsp dried rosemary
-
1 tsp garlic powder
-
Salt and black pepper, to taste

Fresh parsley for garnish
Instructions

Heat olive oil in a skillet over medium-high heat. Sear beef for 2–3 minutes to brown the edges (optional but adds flavor).

Place potatoes and onions in the bottom of the slow cooker. Add the seared beef on top.

In a bowl, mix melted butter, minced garlic, Worcestershire sauce, paprika, thyme, rosemary, garlic powder, salt, and pepper.

Pour the garlic butter mixture evenly over the beef and potatoes.

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender and potatoes are soft.

Stir gently, garnish with fresh parsley, and serve.
