Description
Ingredients
-
2 pounds beef stew meat, cut into bite-sized pieces
-
1.5 pounds baby Yukon gold potatoes (halved if large)
-
1 cup beef broth
-
½ cup salted butter, melted
-
6 garlic cloves, minced
-
1 tablespoon Worcestershire sauce
-
1 teaspoon smoked paprika
-
1 teaspoon dried thyme
-
1 teaspoon kosher salt
-
½ teaspoon black pepper
-
Fresh parsley for garnish (optional)
Instructions
-
Spray the slow cooker with cooking spray.
-
Layer the baby potatoes in the bottom of the slow cooker and season lightly with salt and pepper.
-
Toss the beef stew meat with paprika, thyme, salt, and pepper, then scatter it evenly over the potatoes.
-
In a bowl, whisk together the melted butter, minced garlic, Worcestershire sauce, and beef broth. Pour this mixture evenly over the beef and potatoes.
-
Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours. Avoid stirring during cooking to keep potatoes intact.
-
If the sauce is too thin after cooking, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker; cook on HIGH for 15 more minutes until thickened.
-
Garnish with fresh parsley before serving.
This recipe yields tender, flavorful beef bites in a rich garlic butter sauce, perfect for a comforting slow cooker meal.
