Ingredients

  • 2 pounds beef stew meat, cut into bite-sized pieces

  • 1.5 pounds baby Yukon gold potatoes (halved if large)

  • 1 cup beef broth

  • ½ cup salted butter, melted

  • 6 garlic cloves, minced

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • Fresh parsley for garnish (optional)

Instructions

  1. Spray the slow cooker with cooking spray.

  2. Layer the baby potatoes in the bottom of the slow cooker and season lightly with salt and pepper.

  3. Toss the beef stew meat with paprika, thyme, salt, and pepper, then scatter it evenly over the potatoes.

  4. In a bowl, whisk together the melted butter, minced garlic, Worcestershire sauce, and beef broth. Pour this mixture evenly over the beef and potatoes.

  5. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours. Avoid stirring during cooking to keep potatoes intact.

  6. If the sauce is too thin after cooking, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir into the slow cooker; cook on HIGH for 15 more minutes until thickened.

  7. Garnish with fresh parsley before serving.
