Slow Cooker Garlic Butter Chicken Thighs

Ingredients:

  • 6 boneless, skinless chicken thighs (or bone-in for more flavor)

  • ½ cup unsalted butter (1 stick), melted

  • 6 garlic cloves, minced

  • 1 teaspoon paprika

  • 1 teaspoon Italian seasoning

  • ½ teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • ¼ teaspoon crushed red pepper flakes (optional, for a mild kick)

  • ½ cup chicken broth

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped parsley, for garnish


Instructions:

  1. Prepare the sauce:
    In a small bowl, whisk together melted butter, minced garlic, paprika, Italian seasoning, salt, pepper, red pepper flakes, chicken broth, and lemon juice.

  2. Arrange the chicken:
    Place the chicken thighs in the slow cooker in a single layer (they can overlap slightly). Pour the garlic butter mixture evenly over the chicken.

  3. Cook low and slow:

    • Cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender and cooked through (internal temperature 165°F / 74°C).

  4. Optional crisp finish:
    For golden, crispy edges, place the cooked thighs on a baking sheet and broil for 2–3 minutes after cooking. Spoon some of the garlic butter sauce over the top before broiling.

  5. Serve:
    Spoon the rich garlic butter sauce from the slow cooker over the chicken and garnish with chopped parsley.
