Slow Cooker Honey Sesame Chicken

Ingredients:

  • 2 lbs boneless, skinless chicken thighs or breasts

  • ½ cup honey

  • ¼ cup soy sauce

  • 3 cloves garlic, minced

  • 1 tsp ginger, minced

  • 2 tbsp rice vinegar

  • 2 tbsp ketchup

  • 1 tsp sesame oil

  • 2 tbsp cornstarch + 2 tbsp water (slurry, optional for thickening)

  • 2 tsp sesame seeds, for garnish

  • 2 green onions, sliced (for garnish)

  • Cooked rice, for serving

Instructions:

  1. Prepare the Chicken:

    • Place chicken in the slow cooker.

  2. Make the Sauce:

    • In a bowl, whisk together honey, soy sauce, garlic, ginger, rice vinegar, ketchup, and sesame oil.

    • Pour over chicken.

  3. Cook:

    • Cover and cook on Low for 4–5 hours or High for 2–3 hours, until chicken is tender.

  4. Optional Thickening:

    • Remove chicken and set aside.

    • Pour sauce into a small saucepan and bring to a simmer.

    • Stir in cornstarch slurry and cook until thickened.

  5. Combine and Serve:

    • Return chicken to the sauce and toss to coat.

    • Serve over cooked rice and garnish with sesame seeds and sliced green onions.
