Slow Cooker Loaded Potato Chowder

Servings: 6
Calories: ~480 kcal per serving
Prep Time: 15 mins
Cook Time: 6 hrs (on low) or 3 hrs (on high)
Total Time: 6 hrs 15 mins

Ingredients

  • 6 cups diced russet potatoes (about 4–5 medium)

  • 1 small onion, chopped

  • 3 cloves garlic, minced

  • 3 cups chicken broth

  • 1 cup heavy cream

  • 1 cup milk

  • 1½ cups shredded cheddar cheese

  • 6 slices bacon, cooked and crumbled

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • ½ tsp thyme (optional)

  • Salt and black pepper, to taste

  • Garnish: green onions, extra cheese, and bacon bits

Instructions

  1. Prepare the Base:
Add diced potatoes, onion, garlic, chicken broth, salt, pepper, and thyme (if using) to your slow cooker. Stir to combine.

  2. Cook:
Cover and cook on Low for 6 hours or High for 3 hours, until potatoes are tender.

  3. Make the Creamy Roux:
In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth and slightly thickened.

  4. Combine Everything:
Stir the milk mixture and heavy cream into the slow cooker. Add cheddar cheese and stir until melted and creamy.
Mash a few potatoes in the pot for a thicker texture if desired.

  5. Finish and Serve:
Stir in most of the cooked bacon, saving some for topping.
Serve warm, topped with green onions, extra cheese, and crispy bacon bits.

Notes

  • Add diced carrots or celery for extra flavor.

  • Substitute part of the potatoes with cauliflower for a lighter version.

  • For extra creaminess, mix in a little sour cream before serving.
