Slow Cooker Loaded Potato Chowder

Ingredients

6 cups diced russet potatoes (about 4–5 medium)

1 small onion, chopped

3 cloves garlic, minced

3 cups chicken broth

1 cup heavy cream

1 cup milk

1½ cups shredded cheddar cheese

6 slices bacon, cooked and crumbled

2 tbsp butter

2 tbsp all-purpose flour

½ tsp thyme (optional)

Salt and black pepper, to taste

Garnish: green onions, extra cheese, and bacon bits
Instructions

Prepare the Base:
Add diced potatoes, onion, garlic, chicken broth, salt, pepper, and thyme (if using) to your slow cooker. Stir to combine. -
Cook:
Cover and cook on Low for 6 hours or High for 3 hours, until potatoes are tender. -
Make the Creamy Roux:
In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth and slightly thickened. -
Combine Everything:
Stir the milk mixture and heavy cream into the slow cooker. Add cheddar cheese and stir until melted and creamy.
Mash a few potatoes in the pot for a thicker texture if desired. -
Finish and Serve:
Stir in most of the cooked bacon, saving some for topping.
Serve warm, topped with green onions, extra cheese, and crispy bacon bits.
