Slow Cooker Maple Dijon Chicken Thighs

Servings: 4 | Prep Time: 10 min | Cook Time: 4–5 hours (low) | Calories: ~360 per serving

Ingredients:

  • 4–6 bone-in, skinless chicken thighs

  • Salt and pepper, to taste

  • ¼ cup pure maple syrup

  • 3 tbsp Dijon mustard

  • 2 cloves garlic, minced

  • 1 tbsp apple cider vinegar

  • 1 tsp dried thyme

  • ½ tsp smoked paprika

  • Optional garnish: fresh parsley

Instructions:

  1. Prep chicken: Season chicken thighs with salt and pepper.

  2. Mix sauce: In a small bowl, whisk together maple syrup, Dijon mustard, garlic, apple cider vinegar, thyme, and smoked paprika.

  3. Cook: Place chicken in the slow cooker and pour sauce over the top. Cover and cook on low for 4–5 hours, until chicken is tender and fully cooked (internal temp 165°F / 74°C).

  4. Serve: Spoon sauce over chicken and garnish with fresh parsley. Serve with rice, mashed potatoes, or roasted vegetables.
