Instructions
1. Prepare the Lobster Tails
-
Preheat your smoker to 225°F (107°C).
-
Using kitchen shears, cut down the top of each lobster shell lengthwise to the tail, and gently pull the meat upward to rest on top of the shell (“butterfly” style).
-
Brush lobster tails with olive oil and season with salt, pepper, and smoked paprika.
2. Smoke the Lobster
-
Place the lobster tails on the smoker rack.
-
Smoke for 45–60 minutes, or until the internal temperature reaches 140°F (60°C) and the meat is opaque.
-
Baste occasionally with melted butter for extra flavor.
3. Make the Spicy Garlic Butter
-
In a small saucepan, melt the butter over low heat.
-
Add minced garlic, red pepper flakes, and smoked paprika.
-
Cook for about 1–2 minutes, until fragrant.
-
Stir in lemon juice, parsley, and a pinch of salt.
-
Keep warm for basting and serving.
4. Finish and Serve
-
When the lobster tails are done, brush generously with spicy garlic butter.
-
Serve immediately with extra melted butter on the side and lemon wedges for squeezing.
-
Sprinkle with fresh parsley and a touch of smoked paprika for presentation.
