Smoked Lobster Tails with Spicy Garlic Butter

Ingredients

For the Lobster Tails:

  • 4 lobster tails (about 6 oz each)

  • 2 tbsp olive oil

  • Salt and freshly cracked black pepper

  • ½ tsp smoked paprika

  • Lemon wedges, for serving

For the Spicy Garlic Butter:

  • ½ cup (1 stick) unsalted butter, melted

  • 4 garlic cloves, finely minced

  • 1 tsp crushed red pepper flakes (adjust to spice level)

  • 1 tsp smoked paprika

  • 1 tbsp lemon juice

  • 1 tbsp chopped parsley

  • Salt, to taste

Instructions

1. Prepare the Lobster Tails

  1. Preheat your smoker to 225°F (107°C).

  2. Using kitchen shears, cut down the top of each lobster shell lengthwise to the tail, and gently pull the meat upward to rest on top of the shell (“butterfly” style).

  3. Brush lobster tails with olive oil and season with salt, pepper, and smoked paprika.

2. Smoke the Lobster

  1. Place the lobster tails on the smoker rack.

  2. Smoke for 45–60 minutes, or until the internal temperature reaches 140°F (60°C) and the meat is opaque.

  3. Baste occasionally with melted butter for extra flavor.

3. Make the Spicy Garlic Butter

  1. In a small saucepan, melt the butter over low heat.

  2. Add minced garlic, red pepper flakes, and smoked paprika.

  3. Cook for about 1–2 minutes, until fragrant.

  4. Stir in lemon juice, parsley, and a pinch of salt.

  5. Keep warm for basting and serving.

4. Finish and Serve

  1. When the lobster tails are done, brush generously with spicy garlic butter.

  2. Serve immediately with extra melted butter on the side and lemon wedges for squeezing.

  3. Sprinkle with fresh parsley and a touch of smoked paprika for presentation.
