Smoky Jalapeño Popper Meatloaf with Creamy Ranch Drizzle

Ingredients:

  • 1 ½ lb ground beef

  • ½ lb ground pork

  • 1 cup breadcrumbs

  • 1/2 cup milk

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 2-3 jalapeños, finely chopped (adjust for heat preference)

  • 1 cup shredded cheddar cheese

  • 4 oz cream cheese, softened

  • 2 eggs

  • 1 tsp smoked paprika

  • 1 tsp salt

  • ½ tsp black pepper

For the Creamy Ranch Drizzle:

  • ½ cup ranch dressing

  • 2 tbsp mayonnaise

  • Optional: chopped parsley for garnish

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, combine breadcrumbs and milk, letting soak 2–3 minutes.

  3. Add ground beef, ground pork, onion, garlic, jalapeños, cheddar, cream cheese, eggs, smoked paprika, salt, and pepper. Mix gently until combined.

  4. Shape mixture into a loaf and place in a greased baking dish.

  5. Bake 50–60 minutes, until meatloaf is cooked through and slightly golden on top.

  6. While warm, whisk together ranch and mayonnaise to make drizzle. Drizzle over meatloaf and garnish with parsley if desired.

  7. Let rest 5 minutes before slicing to keep it juicy.
