Sourdough Discard Pizza Rolls

Ingredients:

  • 1 cup sourdough starter discard

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tbsp olive oil

  • ½ cup shredded mozzarella cheese

  • ½ cup pizza sauce (plus extra for dipping)

  • ¼ cup mini pepperoni slices (or diced ham, sausage, or veggies)

  • 1 tsp Italian seasoning

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a bowl, mix sourdough discard, flour, baking powder, baking soda, salt, and olive oil to form a soft dough.

  3. Roll dough out into a rectangle about ¼-inch thick.

  4. Spread pizza sauce evenly over the dough, leaving a small border. Sprinkle mozzarella, pepperoni, and Italian seasoning on top.

  5. Roll the dough tightly into a log. Slice into 1–1.5 inch rolls.

  6. Place rolls on the prepared baking sheet, cut side up.

  7. Bake 15–20 minutes until golden and cheese is melted.

  8. Serve warm with extra pizza sauce for dipping.
