🥢🥩 Soy-Marinated Beef and Broccoli Skewers

Ingredients:

  • 1 lb beef sirloin or flank steak, thinly sliced against the grain

  • 2 cups broccoli florets (blanched 1–2 minutes, then cooled)

  • 1 red bell pepper, cut into chunks (optional for color)

  • 2 tbsp sesame oil

  • ½ cup soy sauce (low sodium works best)

  • 3 tbsp brown sugar or honey

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 2 tbsp rice vinegar

  • 1 tbsp cornstarch (for thickening glaze, optional)

  • Sesame seeds & sliced green onions, for garnish


Instructions:

  1. Make the marinade: In a bowl, whisk together soy sauce, sesame oil, brown sugar (or honey), garlic, ginger, and rice vinegar.

  2. Marinate the beef: Add sliced beef to the marinade, cover, and refrigerate for at least 30 minutes (up to 4 hours for maximum flavor).

  3. Prepare skewers: Thread beef slices, broccoli florets, and bell pepper chunks onto skewers.

  4. Grill: Preheat grill (or grill pan) to medium-high heat. Cook skewers for 2–3 minutes per side, basting with extra marinade.

  5. Optional glaze: Simmer leftover marinade in a small saucepan with 1 tbsp cornstarch + 2 tbsp water until thickened, then brush over skewers before serving.

  6. Finish: Sprinkle with sesame seeds and green onions. Serve hot.
