Spiced Pear Upside Down Cake
Ingredients
For the Topping

2–3 ripe pears, thinly sliced

4 tbsp butter

½ cup brown sugar
-
½ tsp cinnamon
For the Cake

1½ cups all-purpose flour
-
1 tsp baking powder
-
½ tsp baking soda
-
1 tsp cinnamon
-
½ tsp nutmeg
-
¼ tsp ginger
-
¼ tsp salt

½ cup butter, softened
-
¾ cup sugar
-
2 large eggs
-
1 tsp vanilla extract
-
½ cup milk
-
½ cup sour cream (or Greek yogurt)
Instructions

Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.

In a small saucepan, melt butter with brown sugar and cinnamon. Pour into the bottom of the pan.

Arrange pear slices over the brown sugar mixture in a circular pattern.

In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.

Mix in half the dry ingredients, then milk and sour cream, then the remaining dry ingredients.

Pour batter over the pears and spread evenly.

Bake 40–45 minutes, until a toothpick comes out clean.

Cool 10 minutes, then invert onto a serving plate.

Serve warm or room temperature.
