Spiced Pear Upside Down Cake

Ingredients

For the Topping

  • 2–3 ripe pears, thinly sliced

  • 4 tbsp butter

  • ½ cup brown sugar

  • ½ tsp cinnamon

For the Cake

  • 1½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • ¼ tsp ginger

  • ¼ tsp salt

  • ½ cup butter, softened

  • ¾ cup sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup milk

  • ½ cup sour cream (or Greek yogurt)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch cake pan.

  2. In a small saucepan, melt butter with brown sugar and cinnamon. Pour into the bottom of the pan.

  3. Arrange pear slices over the brown sugar mixture in a circular pattern.

  4. In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

  5. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.

  6. Mix in half the dry ingredients, then milk and sour cream, then the remaining dry ingredients.

  7. Pour batter over the pears and spread evenly.

  8. Bake 40–45 minutes, until a toothpick comes out clean.

  9. Cool 10 minutes, then invert onto a serving plate.

  10. Serve warm or room temperature.
