1 pound jumbo shrimp, peeled and deveined (tails optional)

2 tablespoons Cajun seasoning (divided)

Cajun Cream Sauce

5 tablespoons unsalted butter

1 tablespoon all-purpose flour

2 teaspoons Cajun seasoning

1 teaspoon smoked paprika

1 cup heavy cream

1 cup chicken broth

1 cup shredded Monterey Jack cheese (or cheddar)

2 cups fresh baby spinach

Fresh parsley for garnish
Instructions

Season the seafood: Sprinkle salmon with half of the Cajun seasoning. Season shrimp with the remaining Cajun seasoning.

Cook salmon: In a large skillet, heat butter and oil over medium heat. Cook salmon fillets about 3-4 minutes per side, until cooked through. Remove from pan, keep warm.

Cook shrimp: In the same skillet, add shrimp and cook about 2-3 minutes per side until opaque. Remove and set aside.

Make cream sauce: In the same skillet, melt butter. Whisk in flour, Cajun seasoning, and smoked paprika; cook 1 minute. Gradually whisk in heavy cream and chicken broth, and simmer until thickened.

Add cheese and spinach: Stir in shredded cheese until melted, then add spinach and cook until wilted.

Combine and finish: Return salmon and shrimp to the skillet, spoon sauce over seafood, warming it through.
