Spicy Korean-BBQ Beef Bowls

Ingredients

  • 1 lb beef sirloin or flank steak, thinly sliced

  • 2 tbsp soy sauce

  • 1 tbsp gochujang (Korean chili paste)

  • 1 tbsp sesame oil

  • 2 tbsp brown sugar

  • 3 cloves garlic, minced

  • 1 tsp grated ginger

  • 1 tbsp rice vinegar

  • 1 tsp red pepper flakes (optional, for extra spice)

  • 2 cups cooked white or brown rice

  • 1 cup shredded carrots

  • 1 cup sliced cucumber or cucumber ribbons

  • 2 green onions, sliced

  • 1 tbsp sesame seeds

  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a bowl, whisk together soy sauce, gochujang, sesame oil, brown sugar, garlic, ginger, rice vinegar, and red pepper flakes.

  2. Add beef slices to the marinade and toss to coat. Let sit for 10–15 minutes.

  3. Heat a skillet or grill pan over medium-high heat. Cook beef in batches for 2–3 minutes per side until cooked through and slightly caramelized.

  4. Assemble bowls by dividing cooked rice among serving bowls. Top with cooked beef, shredded carrots, cucumber, and green onions.

  5. Sprinkle with sesame seeds and garnish with fresh cilantro if desired.

  6. Serve immediately and enjoy!
