Strawberry Chili Glazed Chicken Skewers

Chicken Skewers

lb (680 g) boneless, skinless chicken thighs or breasts, cubed

2 tablespoons olive oil

½ teaspoon salt

½ teaspoon black pepper

Wooden or metal skewers

Strawberry Chili Glaze

1 cup fresh or frozen strawberries, finely chopped

¼ cup strawberry jam or preserves

2 tablespoons honey

12 tablespoons chili sauce or sweet chili sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar or apple cider vinegar

1 clove garlic, minced

½ teaspoon red chili flakes (adjust to taste)


Instructions

1. Prepare the Glaze

  • In a small saucepan over medium heat, combine strawberries, jam, honey, chili sauce, soy sauce, vinegar, garlic, and chili flakes.

  • Simmer for 8–10 minutes, stirring until thick and glossy.

  • Remove from heat and let cool slightly.

2. Prep the Chicken

  • Toss chicken cubes with olive oil, salt, and pepper.

  • Thread chicken evenly onto skewers.

  • Brush lightly with some of the strawberry chili glaze.

3. Cook the Skewers

  • Grill: Preheat grill to medium-high. Grill skewers for 12–15 minutes, turning and glazing frequently.

  • Oven option: Bake at 425°F (220°C) for 18–20 minutes, broiling for the last 2 minutes.

  • Pan option: Cook in a grill pan over medium-high heat until caramelized and cooked through.

4. Serve

  • Brush with remaining glaze.

  • Garnish with sliced green onions or sesame seeds if desired.

Notes

Chicken thighs stay juicier, but breasts work well too.

Spice control: Reduce chili flakes for mild heat or add sriracha for extra kick.

Make ahead: Glaze can be prepared up to 2 days in advance.

Extra shine: Brush glaze on right before serving for a glossy finish.
