Ingredients
Chicken Skewers
1½ lb (680 g) boneless, skinless chicken thighs or breasts, cubed
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
Wooden or metal skewers
Strawberry Chili Glaze
1 cup fresh or frozen strawberries, finely chopped
¼ cup strawberry jam or preserves
2 tablespoons honey
1–2 tablespoons chili sauce or sweet chili sauce
1 tablespoon soy sauce
1 tablespoon rice vinegar or apple cider vinegar
1 clove garlic, minced
½ teaspoon red chili flakes (adjust to taste)
Instructions
1. Prepare the Glaze

In a small saucepan over medium heat, combine strawberries, jam, honey, chili sauce, soy sauce, vinegar, garlic, and chili flakes.

Simmer for 8–10 minutes, stirring until thick and glossy.

Remove from heat and let cool slightly.
2. Prep the Chicken

Toss chicken cubes with olive oil, salt, and pepper.

Thread chicken evenly onto skewers.

Brush lightly with some of the strawberry chili glaze.
3. Cook the Skewers

Grill: Preheat grill to medium-high. Grill skewers for 12–15 minutes, turning and glazing frequently.

Oven option: Bake at 425°F (220°C) for 18–20 minutes, broiling for the last 2 minutes.

Pan option: Cook in a grill pan over medium-high heat until caramelized and cooked through.
4. Serve

Brush with remaining glaze.

Garnish with sliced green onions or sesame seeds if desired.
Notes
Chicken thighs stay juicier, but breasts work well too.
Spice control: Reduce chili flakes for mild heat or add sriracha for extra kick.
Make ahead: Glaze can be prepared up to 2 days in advance.
Extra shine: Brush glaze on right before serving for a glossy finish.
