Super Quick Linguine with Mushrooms
Ingredients

12 oz linguine pasta
-
3 tbsp olive oil (or butter)

10 oz mushrooms (cremini, button, or mixed), sliced

3 cloves garlic, minced
-
½ cup dry white wine (or vegetable broth)
-
½ cup grated Parmesan cheese
-
2 tbsp fresh parsley, chopped
-
½ tsp crushed red pepper flakes (optional)

Salt & black pepper, to taste
-
Extra Parmesan & drizzle of olive oil for serving
Instructions

Cook the pasta:

Bring a large pot of salted water to boil.

Cook linguine until al dente, reserving ½ cup pasta water before draining.

Sauté the mushrooms:

In a large skillet, heat olive oil (or butter) over medium-high.

Add mushrooms, season with a little salt, and cook until golden brown (about 5–7 minutes).

Stir in garlic and red pepper flakes, cook 1 minute until fragrant.

Build the sauce:

Deglaze pan with white wine (or broth), scraping up browned bits.

Let simmer 2–3 minutes until slightly reduced.

Combine pasta and sauce:

Add drained linguine to the skillet with mushrooms.

Toss with Parmesan, parsley, and a splash of reserved pasta water until glossy.

Season with salt and black pepper.

Serve:

Plate with extra Parmesan and a drizzle of olive oil.
