Super Quick Linguine with Mushrooms

Ingredients

  • 12 oz linguine pasta

  • 3 tbsp olive oil (or butter)

  • 10 oz mushrooms (cremini, button, or mixed), sliced

  • 3 cloves garlic, minced

  • ½ cup dry white wine (or vegetable broth)

  • ½ cup grated Parmesan cheese

  • 2 tbsp fresh parsley, chopped

  • ½ tsp crushed red pepper flakes (optional)

  • Salt & black pepper, to taste

  • Extra Parmesan & drizzle of olive oil for serving


Instructions

  1. Cook the pasta:

    • Bring a large pot of salted water to boil.

    • Cook linguine until al dente, reserving ½ cup pasta water before draining.

  2. Sauté the mushrooms:

    • In a large skillet, heat olive oil (or butter) over medium-high.

    • Add mushrooms, season with a little salt, and cook until golden brown (about 5–7 minutes).

    • Stir in garlic and red pepper flakes, cook 1 minute until fragrant.

  3. Build the sauce:

    • Deglaze pan with white wine (or broth), scraping up browned bits.

    • Let simmer 2–3 minutes until slightly reduced.

  4. Combine pasta and sauce:

    • Add drained linguine to the skillet with mushrooms.

    • Toss with Parmesan, parsley, and a splash of reserved pasta water until glossy.

    • Season with salt and black pepper.

  5. Serve:

    • Plate with extra Parmesan and a drizzle of olive oil.
