Sweet Chili Meatloaf with Garlic Green Beans

For the Meatloaf:

1 lb (450 g) ground beef (or beef/pork blend)

½ cup breadcrumbs

½ cup milk

1 egg

1 small onion, finely chopped

2 cloves garlic, minced

2 tbsp sweet chili sauce (plus extra for glaze)

1 tsp Worcestershire sauce

½ tsp salt

¼ tsp black pepper

½ tsp smoked paprika (optional)

For the Garlic Green Beans:

1 lb (450 g) fresh green beans, trimmed

2 tbsp olive oil or butter

2 cloves garlic, minced

Salt & pepper, to taste

1 tsp lemon juice (optional)


Instructions

  • Preheat Oven:
    Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.

  • Prepare Meatloaf:
    In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, sweet chili sauce, Worcestershire, salt, pepper, and smoked paprika. Mix gently until combined.

  • Shape & Glaze:
    Form mixture into a loaf and place in the prepared pan. Brush additional sweet chili sauce on top.

  • Bake Meatloaf:
    Bake 45–50 minutes, until the internal temperature reaches 160°F (71°C). Optional: broil 2–3 minutes at the end for a caramelized glaze.

  • Cook Green Beans:
    While meatloaf bakes, heat olive oil or butter in a skillet over medium heat. Add garlic and sauté 30 seconds until fragrant. Add green beans, season with salt and pepper, and sauté 5–7 minutes until tender-crisp. Finish with lemon juice if desired.

  • Serve:
    Slice meatloaf and serve alongside garlic green beans. Drizzle extra sweet chili sauce on top if desired.

Notes

Swap ground turkey or chicken for a leaner meatloaf option.

Add finely shredded carrots or bell peppers to the meatloaf for extra flavor and nutrients.

Meatloaf can be prepared ahead and refrigerated; bake when ready.

Green beans can be blanched before sautéing for a softer texture.
